The grapes for Cesarini Sforza wines come exclusively from the classic Trento DOC Metodo Classico production area, whose vineyards lie at between 350 and 650 metres above sea level. Conditions in this area are absolutely ideal for making Italian spumanti wines: vineyards in ideal locations, with excellent exposure, resulting in sparkling wines with an exceptional freshness, elegance and bouquet. The close collaboration between the La-Vis and Cesarini Sforza winemaking teams and the results of the Zoning Project have led to the optimum production of Chardonnay and Pinot Noir.
The medium-high (250 - 550 metres asl) zones in the Avisian Hills around the towns of Lavis and Giovo are characterised by a sub-Alpine continental climate, western exposure and by deep, well-structured, well-drained soils. The highest vineyards in the Valle di Cembra, reaching 700 metres asl have an almost Mediterranean climate, with the positive influence of the "Ora", the wind that comes of Lake Garda. Here the temperature varies between 18 to 27 degrees from night to day in the run up to harvest time. The soil is not particularly fertile and is well-drained. The vineyards are terraced, using simple Trentino pergolas, which are being replaced by the guyot system.
Cesarini Sforza is one of Italy’s top producers of Metodo Classico Spumante, still made according to the specifications first introduced in Trentino about a century ago. The base wine undergoes a very slow second fermentation in the bottle in the cool cellars, where it is then kept for some years.
